Eggplant Parm

Saturday I made Eggplant Parmesan. It wasn’t as good as it normally is, because I tried to rush it. I didn’t cut the eggplant evenly enough and I didn’t use enough oil to fry them. So it was just sort of “eh”. It happens.

Churches

Sunday Jake got a craving for Church’s, so he went to pick that up. I loooove their biscuits.

Man in the kitchen = super hot.

Monday Jake made pancakes. He’s the pancake master. He flips them in the air and everything!

Pancakes

We’re trying to get through our Trader Joe’s multigrain pancake mix, because we don’t love it. They’re too dense. Much better when Jake makes them from scratch.

Chicken Tikka Masala

Tuesday my best friend Jessica came into town (she’s staying with us for a whole week!), so my dedication to documenting our meals kind of fell off of a cliff. So that’s an old picture of Chicken Tikka Masala up there. I have to make chicken tikki whenever Jessica comes into town. It’s an absolute requriement. It was a little off from usual, though, because I ran out of cumin halfway through. Jake and Eliza didn’t eat with us; they had pizza at a birthday party.

Again, no pictures were taken of the Tortilla Soup I made Wednesday. It was my first time out with this one, and it was pretty delicious. I’ll be making it again with a few alterations.

Thanksgiving Part 1

Thursday we went to two Thanksgivings. For Thanksgiving Part I, I’m made the cranberry sauce, brussels sprouts, green bean casserole, and pumpkin chocolate chip cookies. It was delicious. Thanksgiving Part II was more appetizer grazing, as we were there later in the day.

Thanksgiving Part 3

And then Friday was, believe it or not, Thanksgiving Part III. So much Thanksgiving food this week, and it’s still not enough. I’m going to try making Thanksgiving from scratch myself in a few weeks!
