Fettuccine Alfredo

Sunday we made fettuccine alfredo because we were late getting back from the grocery store and it was the fastest thing on our list. We whipped up a quick alfredo sauce: roux with a tablespoon of butter and a tablespoon of flour, milk, and fresh shredded parmesan cheese. We were going to have salads, but we didn’t realize our salad had gone bad. So we threw in some frozen peas instead.

Monday we had Caribbean jerk wraps, which is just about Jake’s favorite thing on the planet. Caribbean jerk chicken + colby jack cheese + lettuce + corn cut from the cob + black beans + bacon + tomato + avocado on a tortilla. (I forgot to take a picture.)

Pork Tenderloin with Apple Succotash

Tuesday we had Pork Tenderloin with Apple Succotash for the first time. The verdict: the elements were good together, but not on their own. The spices on the pork were way to strong, but a bite of succotash with the pork toned that down. I think that the pork needs to be cut up so it’s like a salad next time. Also, everyone likes lima beans. Who knew?

Ranch Chicken, Rice, and Roasted Veggies

Wednesday we had Ranch Chicken, Rice, and Roasted Veggies. Firstly, Trader Joe’s rice pilaf is the bomb. As for the rest of it, I just mixed a packet of ranch dressing powder mix with some olive oil, brushed it over the chicken tenders and tossed the veggies (potatoes, carrots, onions, and brussels sprouts in it) and baked ‘em (at 400 degrees?) till they were done (I put the veggies in for about a half an hour before I tossed in the chicken). This is a totally made up meal, and it turned out really good. We’ll be coming back to this one.

Fakesgiving

Thursday we had Fakesgiving, which I already blogged about.

Turkey Sandwich with a Moist Maker

Having Fakesgiving also means lunches of Thanksgiving leftover sandwiches with a moist maker, inspired by Friends. We make sure to take home leftovers of all of the components from our big family potlucks so I can make these every year.

Leftovers Night

Friday we were running out of room in the fridge, so we had a leftovers. The kids think it’s really fun to eat a bunch of random stuff, for some reason.

Homemade Pizza

Saturday we had pizzas made with this dough recipe and Hclappy’s sauce recipe. This time we made one standard pepperoni, and one chicken pesto made with jarred pesto (because we had some; but homemade is sooo much better) and leftover rotisserie chicken. Yum!


For next week, I switched around the day order so that I can write the Savory Sunday post Friday night. We’re going to try out scheduling morning posts starting next week instead of just posting whenever we finish (which we’ll still do for any extra posts in addition to the morning ones), and to do that we need to be able to write these before Saturday night. So next week’s Saturday is actually in the post above. Sorry if that’s confusing.
