Other | Brunch at Succotash

Sunday Jake’s brother Nick moved in with us, and tacos are a good option for feeding friends that help move furniture (especially when you’ve got a vegetarian in the mix). We use homemade taco seasoning, which is delicious.

Chicken Tikka Masala

Monday we made my signature, chicken tikka masala. Nothing better than spicy, rich Indian food! We always buy extra milk for the week when we make this.

Making dough

Tuesday was had homemade pizza again. The kids LOVE to help make the dough.

Pineapple, Ham, and Jalapeno Pizza

We used Hclappy’s sauce recipe, but blended it instead of making it chunky this time. The first time around, we used canned tomatoes. This time we used fresh. Next time we’ll use fresh tomatoes again, but I’ll roast them first. Then the sauce will be perfect.

The recipe makes two pizzas, so we made a boring pepperoni for Mister Picky Pants (Jake) and made Hawaiian pizza (Ham, Pineapple, and Jalapeños) for me.

Chicken Salad Pita Sammies

Wednesday we made chicken salad sandwiches on pita and ate them kind of like a taco. They weren’t very good, because the pita was kind of stale. We also had a bit of Trader Joe’s frozen mac & cheese on the side, which is one of our very favorite things.

Yogurt Berry Crepes

Thursday we made crepes for the first time. We used a recipe from this cookbook but made up our own fillings: vanilla yogurt, strawberries and blueberries, and a bit of granola. They were GOOD, but we need a little more practice to get them as thin as they’re supposed to be.

Red Curry and Saffron Rice

Friday we had red chicken curry with saffron rice. We used Trader Joe’s curry sauce (we like the yellow a little better than the red, but it was still good) and added chicken and peas. It’s useful to have a couple of these semi-homemade meals on the list for hectic nights.

Kitchen Sink Scramble

On Saturday we had brunch at Succotash.

Red Beans and Rice

Then we had dinner at Boo Bayou (a Halloween festival at Eliza’s school). The sides and drinks were potluck, the the main course of red beans and rice was catered from Jazz.
