Egg, Spinach, and Ham on Toast with Hollandaise

Monday we had over-easy eggs, spinach, and ham on toast with hollandaise. It was the first time I made hollandaise, and the blender method from the linked recipe made it so easy! I was sort of intimidated, but it wasn’t hard at all. I think I still need some tweaking (I think I used too much lemon?), but it came out way better than expected for my first try. The rest of the meal was a copycat of First Watch’s breakfast scramble. Breakfast for dinner is the best.

Spinach Cheese Manicotti

Monday we had Spinach cheese manicotti. Tastes a lot like lasagna, but WAAAAY faster. I’ll use less sauce next time, though.

Chicken and Noodles

Tuesday we had Chicken and noodles, one of my favorite family recipes. It’s getting cold outside, so comfort food like this is hitting the spot right now.

Butternut Squash Soup

Wednesday we had Butternut Squash Soup from the current issue of Every Day with Rachael Ray (November 2012). It was kind of weird. The consistency was amazing, but I think that the spices in the recipe weren’t balanced. It was way to heavy on the cinnamon and the chili powder; you could hardly taste the squash or the mint. It was interesting that the flavors hit at different points (as you hold it in your mouth, the flavor changes, which is cool), but it was also way too rich for a bowl-sized serving. This is a cup of soup sort of soup, even after I make some adjustments.

Spinach, Feta, Walnuts

We also had side salads. Mine was a spinach, feta, and walnut salad with my favorite homemade dressing.

Thursday was leftovers night.

Homemade Pizza (Jen aka Hclappy's recipe)

Friday we made Jen (aka Hclappy)’s pizza recipe. Hands down, best homemade pizza we’ve ever made. The chunky sauce was so amazing and flavorful (though Jake suggests I puree it for next time because he’s anti-tomato). For the crust, we used this recipe at Jen’s request. Her recipe is for a bread maker, the recipe we used utilizes a stand mixer.

We loved this pizza so much that we’re making it again next week (with different toppings).

Bacon, egg, and cheese on toast!

Saturday we made bacon, egg, and cheese on toast. We wanted to save the chicken tikka masala for the next week so that Jake’s brother could have it with us, so it was pretty much a “what can we put together with what we have in the fridge really quickly” sort of a night.
