The Reality

Sunday | Chili
Monday | Kebabs at Matt’s House
Tuesday | My Mom Made Chicken Tikka Masala
Wednesday | Chili Dogs & Mac and Cheese
Thursday | Tofu Lo Mein
Friday | Ham and Pea Frittata (but with turkey)
Saturday | Shepherd’s Pie

Other | Big Brunch on Monday (we made Biscuits and Gravy)

So… this week pretty much had nothing to do with the meal plan. Which is fine, because we went grocery shopping Tuesday. So we were able to readjust the plan and didn’t overbuy on food.

We went from Chicken Sandwiches and Cottage Cheese Sunday to Chili because Jake’s little brother and his girlfriend came over to hang out. It felt like fall, so we thought that Chili was the perfect feed-lots-of-people solution. (We ended up having the chicken sandwiches for lunch on Tuesday.)

Biscuits and Gravy

Monday was Labor Day here in the US, so we celebrated our day off by sleeping in and making a nice big brunch. We made biscuits and gravy with scrambled eggs. We used this recipe for Biscuits and Chicken Apple Bacon Gravy, but subbed out the chicken sausage and bacon for pork sausage.

Chicken Tikka Masala

Monday night and Tuesday didn’t go as planned either, because other people cooked for us (yay!). On Tuesday, our friend Matt had a little grill get-together. Kebobs! Wednesday, my mom and my sister came over and made us Chicken Tikka Masala (which is my signature and is the only recipe my mom has stolen from me instead of vice versa!). We love eating with family and friends. Somehow the conversation and laughter flows better around food.

Chili Dogs and Mac & Cheese

Wednesday we attacked some of our leftover chili with Chili Dogs and Mac & Cheese (from a box). I say this all of the time, but I totally feel guilty when we have dinners like these. But oddly enough, everyone else is happier with this sort of food.

Tofu Stir Fry

Thursday we had Tofu Stir Fry. It’s super easy: cube the tofu and cook in oil (we use a mixture of olive oli and sesame oil) until browned on all sides, cook linguini noodles, toss the noodles in teriyaki sauce with mixed Asian veggies (we use a frozen mix). So easy. It’s a good thing, too, because Jake didn’t get home until almost the kids’ bedtime on Thursday and cooking solo with Jonas underfoot is no easy feat.

Turkey and Pea Fritatta

Friday sous chef Jake made Ham and Pea Frittata (but with turkey) from start to finish, so you know that this recipe is super doable. His tasted just like mine! This is one of Jonas’s favorite dinners. He won’t eat peas or onions on their own, but he devours this. I wonder what else I can bury in eggs?

Shepherd's Pie

Saturday we had Shepherd’s Pie. We switched up a bit from the recipe; we did sweet potato and potato mash on top instead of cauliflower / squash / potato mash (we use what we’ve got). It was super yummy. Our friends Harvey and Lisa stopped by, and it disappeared fast between the six of us.

As for the extra stuff we were planning for this week, we didn’t really get to any of it. Spending tons of time with family and friends didn’t leave enough time for all of the extra baking! Planning on moving all of that stuff to the next week, right along with the dinners we didn’t get to.

E's Lunch

Here’s what went into Eliza’s Lunches last week:

The Plan

Monday | No school
Tuesday | Banana, Sunflower Butter and Honey Sandwich, Veggie Sticks, and Cottage Cheese
Wednesday | Turkey Wrapped Cheese stick, Crackers, Carrots
Thursday | Annabel’s veggie fritters (recipe from First Meals ), Hard Boiled Egg, Apple
Friday | Biscuit Pizza, Grapes

The Reality

Monday | No school
Tuesday | Sunflower Butter and Jelly Sandwich on a Biscuit, Veggie Sticks, Cottage Cheese, and Juice
Wednesday | Turkey Wrapped Cheese stick, Crackers, Strawberries, and Juice
Thursday | Pumpkin Bread, Yogurt, Grapes, and Juice
Friday | Leftover Tofu Stir Fry, Banana, Juice

As can be seen, I didn’t get to the fancy stuff. But we needed to use up ingredients on hand, and making sure food gets eaten before it goes bad trumps fancy. The stuff we didn’t get to is movin’ to next week.

Here’s what next week will sort of look like:

The Plan

Sunday | Dinner at my dad’s
Monday | Brisket (from this cookbook), Mashed Potatoes, and other stuff my family is bringing
Tuesday | Creamy Chicken Penne (recipe to come)
Wednesday | Omelets and Country Fried Potatoes
Thursday | Homemade Vegetarian Pizza (using Elsie Blaha Cripe’s Pizza Dough recipe)
Friday | Dijon Chicken Strata (from this cookbook)
Saturday | Chicken Pot Pie

Eliza’s Lunches:

Monday | Turkey Wrapped Cheese Stick, Grapes, Veggie Straws, Water
Tuesday | Annabel’s veggie fritters (recipe from First Meals ), Hard Boiled Egg, Orange, Water
Wednesday | Biscuit Pizza, Carrots, Juice
Thursday | Apples with Sunflower Butter, Crackers, Milk
Friday | Biscuit Pizza, Salad, Grapes, Water

Other | French Bread and Chocolate Pumpkin Muffins (recipe courtesy of Sharmon)
