The Reality

Tuesday | Dijon Chicken Strata (from this cookbook), which failed, so frozen pizza
Wednesday | Caribbean Jerk Chicken and Wild Rice with Black Beans and Mango
Thursday | Frozen Stir Fry
Friday | Italian Sausage with Potatoes and Peppers
Saturday | Office Party


Vegetarian Pizza

Sunday we made a veggie pizza with sun dried tomatoes and black olives using Elsie Blaha Cripe’s Pizza Dough recipe. It was okay. We still don’t have the crust down; it was a little too hard. And, though we like sun-dried tomatoes, apparently we’re not crazy about them on pizza. The texture combo is weird (Eliza picked hers off and ate them separately.) I think we need to look for a New York style crust.

Burnin'

Monday we were burning sticks and twigs and decided to have a campfire cook out on a whim. We cooked hog dogs over the fire and had (boxed) macaroni and cheese with it. I also prepped Tuesday’s dinner, because it could sit overnight before cooking.

Dijon Chicken Strata

Tuesday we tried Dijon Chicken Strata (from this cookbook) for the first time. It was NOT GOOD. It was a mushy, goopy mess, even when I cooked it A LOT extra. My mom says it’s because I didn’t use stale bread; but the recipe didn’t say to. Grrr. We had frozen pizza instead, which we keep as a back-up when new recipes we try fail.

Caribbean Jerk Chicken with Mango Rice

Wednesday we tried to do something new with our Caribbean Jerk Rub, which we’re obsessed with. We paired Caribbean Jerk Chicken with Wild Rice, Black Beans, and Mangos. The rice was a little bland to be paired with the chicken; I’ll have to do more to spice it up next time. The mango worked well, though. Jake doesn’t like many kinds of fruit (including mangos), but it got him to eat it! Win.

Stir-Fry

Thursday we didn’t have time to cook, so Jake grabbed a frozen stir-fry for us on the way home from work.

Italian Sausage and Peppers

Friday we made Italian Sausage with Potatoes, and Peppers. I decided to cook them at 400 degrees instead of broiling, as the recipe calls for, so that’s an option.

Strawberry upsidedown cake!

Saturday was a big office party at Jake’s boss’s. Our contribution was Peach Upside Down Cake, but with strawberries. So so good.

Other Stuff from Vol. 33

There was a lot of random baking going on this week. We made ginger snaps from a mix, but put Halloween sprinkles on them so they felt more like Autumn. We made chocolate pumpkin muffins from a recipe we got from Sharmon (huge hit!), and we made cinnamon coffee cake from a Trader Joe’s mix. Jonas LOVES baking, so we’ve been making more stuff so he can be a little sous chef. It’s making breakfasts more interesting.

It cooled down a lot in Kansas City this week, so there’s been a lot more tea brewing. I love Black Mango tea. Eliza was off of school on Friday, so we walked to the Filling Station to get lattes and treats. Coffee shops are our favorite.

I can’t seem to get those veggie fritters made, but next week I AM GOING TO DO IT!
