Copycat Wendy's Spicy Chicken

Sunday we had Copycat Wendy’s Spicy Chicken Fillet Sandwich with loaded mashed potatoes. Jake’s been craving fast food, and his very favorite is Wendy’s Spicy Chicken Fillet Combo with nothing on it but cheese. So I made the copycat version, even though it’s a pain in the butt and makes the whole house smell (I hate deep frying). Anyway, this recipe copies the flavor well but actually uses, you know, real ingredients.

I was going to make homemade buns too, but we didn’t end up having time.

Chicken Tikka Masala

Monday we had Chicken Tikka Masala, which is pretty much my signature dish. It’s amazing: so many spices, so packed with flavor, and deliciously thick and luxurious thanks to heavy cream. I made extra sauce so I’d only have half of the work to do when our friends inevitably requested it for the following Sunday.

Chicken Carbonara

Tuesday we had Chicken Carbonara. Bacon + cream sauce, what could go wrong? We put peas in this time.

Taco Soup

Wednesday my grandparents and my dad came over for dinner, and my grandma brought a whole crockpot of this Taco Soup! And she let us keep the leftovers! Awesome.

I made snickerdoodles for dessert, because they’re my dad’s favorite.


Thursday we warmed up a bunch of leftovers and everybody had a bit of everything. I’m not sure why, but it’s a lot of fun. (Those noodles are leftover from my mom taking the kids and I to lunch at Po’s after we went to the Nelson earlier in the week.

Tempura Eggplant and Squash

Friday my best friend Jessica came into town from Denver. For dinner, Jake and Eliza went to the rehearsal dinner for the wedding of our friends Steve and Michelle (Eliza was the flower girl).

Jessica and I stayed home and had more taco soup. We also made tempura eggplant and butternut squash. The fairy tale eggplant was from a recent City Market haul and the butternut squash was grown by my friend Christa (thanks, Christa!). The tempura batter was just a box mix, but we made dipping sauce too: minced garlic + olive oil mayonnaise (Amazing) and orange juice + soy sauce + smoked paprika + a pinch of sugar. MMMmmmm. I froze the rest of the eggplant; I’ll roast it and blend it into marinara sauce soon.

Saturday was Steve and Michelle’s wedding, so we ate there (of course). Note: best wedding food ever.

Knowing this next week would be super crazy, I opted-out of putting the “something new” we usually have on the list. Which means that Cheese Quinoa Burgers aren’t going to be made until the following week.
