Chicken Stir-Fry

Sunday we had Teriyaki Chicken Stir-Fry, which is a super easy, veggie filled dinner. Whole wheat noodles + stir fried chicken tenders + frozen Asian veggies + store bought teriyaki sauce. We were joined by Jake’s sister, and even she liked it (she’s an even pickier eater than Jake).

Cauliflower Quiche

Monday we had Roasted Cauliflower Quiche and Grilled Asparagus. This is one of our favorite vegetarian dishes, and Jake (who doesn’t like cauliflower) happily eats it. The key to the hearts of the picky nesters is eggs and cheese. Quiche sounds intimidating, but this recipe is do-able even for a beginner. Oh, and it’s usually paired with garlicky green beans, but I’m obsessed with grilled asparagus right now. And I’m happy that Eliza will eat it if we let her dip it in ketchup (weird, but okay).

Crispy Chicken Salad

Tuesday we had Crispy Chicken Salad: cut up breaded chicken patties + carrots + cheese + spinach. I feel lazy when I make this kind of stuff, but it’s mostly balanced, so I shouldn’t.

Tilapia Tacos

Wednesday we had Tilapia Tacos (chicken tacos for Jake). This is such a great dish for summer: it’s light, bright, and refreshing.

Turkey, Egg, and Cheese Roll

Thursday I made Rachel Denbow’s Ham, Egg, and Cheese Roll. We subbed the ham for turkey, but this was a huge win. Everyone loved it, it was super easy, and I’ll definitely be throwing it into our regular food rotation. Jake said that the only thing that would make it better is a little less pesto and the addition of bacon. Of course he thinks it would be better if it was less healthy. Hah!

Lasagna

Friday I made Lasagna and we’ll be eating the leftovers well into next week.

Saturday night the kids were gone, so we decided to forgo cooking and brought home Chipotle instead. I’m a cheap date.

Other Good Stuff | Last week Jonas and I had lunch at McCoy’s for my best friend Harvey’s birthday | I had the Beef Brisket Dip (smoked brisket + crispy onion frito + chipotle mayo + bbq jus + potato bun) for the first time and I’ve been daydreaming about it ever since | My mom made me lunch on day last week: homemade dumplings with a spicy sauce and asian chicken lettuce wraps in peanut sauce: going to have to learn to make all of that | Made more Banana Bread | Jonas was the Sous-Chef: he poured in all of the ingredients (except for the eggs) | One day for lunch we made hogs in a blanket: sausage wrapped in the kind of crescent rolls that come in a can (It’s good kid food)
