Sunday We went to two graduation parties, so we ate dinner at those. Barbecue- yum! Unfortunately, we didn’t have time to hit up the grocery store on the way home, so this week ended up weird and not-as-planned.

Cream Cheese Burgers

Monday, Jake made Cream Cheese & Bacon Burgers. So delicious.

Chicken Parmesan

Tuesday we had Chicken Parmesan. Hard to go wrong there.

Wednesday we were going to have Roasted Cauliflower Quiche, but I found out that we didn’t have half of the ingredients I thought we had after I had already started. Boo. I was running out of cooking time, so we just had frozen junk food: pizza rolls and hot pockets. I feel totally guilty when we eat stuff like that, but I don’t think it matters in the long run, really. We skipped the dinner table and watched the original Star Trek pilot. It felt like a family slumber party.

P.S. Every time I eat a Hot Pocket (not often), all I can think about is this.

Green Enchiladas

Thursday we meant to have chicken enchiladas, but I messed it up. I usually use cooked rotisserie chicken for this, but we had extra chicken tenders. I decided I’d boil them, but the plastic cushion the chicken was hanging on slid into the boiling water too and melded to the chicken. I couldn’t tell the difference between the plastic and the chicken, so I had to throw it out. So we went vegetarian with it. The recipe for both ways is here.

Friday Eliza got to pick the dinner, so we had breaded shrimp (of the frozen variety, because it was actually cheaper pre-prepared), cheesy broccoli and cauliflower, and berries. We’ve been obsessed with berries lately: we toss some combination of strawberries (which aren’t technically berries), raspberries, blackberries, and blueberries with lime juice and honey. Man, it is so good. This will keep us from eating ice cream and candy for weeks.

Caribbean Chicken Tacos

Saturday we had tons of guests, so we made Chicken Wraps with our homemade Caribbean Jerk Rub. We set it up wrap-bar style so people could build their own. We had homemade guacamole, my mom’s homemade salsa, black beans, corn cut from the cob, diced tomatoes, torn romaine, black olives, mushrooms, colby jack cheese, spicy ranch, and the Caribbean chicken to choose from. Doing “build your own” dinners like this is a great way to please large numbers of people that all might like different things.

Plus Jake likes to show off the jerk rub, because he’s obsessed with it.
