Chicken Carbonara

Sunday we had Chicken Carbonara, a pasta dish made with chicken, bacon, heavy cream, parmesan cheese, and egg yolks. It will kill you, for sure, but it’s creamy and delicious. This time we added in peas to (we usually have them on the side with this). We try to forget about this recipe and only have it every few months. High cholesterol may be a small price to pay.

Pizza Bruchetta

Monday we had one of our stand-bys, bruchetta. But we didn’t have any basil (oops), so it was more like just pizza bread. It was pepperoni, fresh mozzarella, tomatoes, balsamic vinegar, and olive oil on bread. Yum!

Caribbean Chicken Quesadillas

Tuesday we had Caribbean Chicken Quesadillas (using this homemade rub). Jake’s obsessed with that rub, so we’re pretty much having something with it once a week until he’s sick of it. These were spinach tortillas stuffed with colby jack, black beans, fresh corn, and the chicken.

Spaghetti with Salads

Wednesday I was too lazy to even make meatballs. So we had spaghetti with meat marinara and side salads.

Thursday we grilled brats, but I forgot to take a picture.

Friday was ironic. We didn’t make Cashew Chicken earlier in the week because we were missing an ingredient that Trader Joe’s didn’t have. So I decided to walk, pulling the kids in our little red wagon, to the grocery store about a mile away from us. We also stopped by a pet store. By the time we got home with the missing ingredient, I was too tired to cook. So we had macaroni and cheese. So it goes.

Breakfast Burrito

Saturday we celebrated Cinco de Mayo gringo style with Rotel Queso Dip for lunch and Breakfast Burritos (eggs, bacon, cheese, avocado, and salsa) with country fried potatoes for dinner. The burritos weren’t planned, but we needed to use up our tortillas before they went bad.

Berry Green Smoothies

We also made smoothies on Saturday. We blended mixed frozen berries (strawberries, raspberries, and blackberries), a banana, a handful of fresh spinach (which you can’t taste), a few fresh blackberries, a tablespoon of sugar, and a cup or so of orange/banana/strawberry juice. It was awesome! Jonas, who is anti all non-banana fruit right now, drank it right up. And it was quite satisfying sneaking spinach into Eliza.
