Sometimes we like to make everything from scratch, but sometimes we like quick and easy meals. This is a recipe we do both ways: this is the quick and semi-homade version. We use chicken tenders instead of breasts to speed up cooking time.
Quick and Easy Chicken Parmesan
8 boneless, skinless chicken tenders
1 tablespoons milk
1 cup breadcrumbs
1 cup plus 2 Tbsp shredded Parmesan cheese
1 Tbsp Italian Seasoning
1 tsp salt
1/4 tsp pepper
2 Tbsp olive oil
16 oz jar of your favorite spaghetti sauce or marinara (we like four cheese)
1/2 lb thin spaghetti noodles
water for noodle cooking
Beat the egg in a medium sized bowl and add the milk. In a separate bowl, mix the breadcrumbs, 2 Tbsp parmesan cheese, italian seasoning, salt, and pepper. Place the coated chicken on a plate until you’re ready to cook it.
Dip each piece of chicken in the egg mixture and then coat in breading.
Heat the olive oil over medium high heat. Cook the chicken in the oil until browned on both sides.
Boil water and cook the noodles according to the package instructions.
Put the chicken in a baking dish and top with half of the spaghetti sauce and the remaining cheese. Broil until cheese is brown and bubbly.
Heat the remaining sauce in a saucepan.
Serve chicken over noodles with extra sauce, if desired.
*You can use mozzarella cheese for topping instead.
*We used Panko bread crumbs instead this time around. Not recommended. Panko is usually crispier, but it can’t hold up to the sauce. It lost its texture completely.
*This goes great with asparagus or Caesar salad!
