On a Monday–Welcome to the meal plan and reality for last week!


The Plan

Sunday | Frozen Mac & Cheese, Fish Sticks (for me and the kids) and Chicken Strips (for anti-fish Jake)
Monday | Tequila Lime Chicken
Tuesday | Quinoa Mac & Cheese (new-to-us recipe; we’re swapping out the red peppers for broccoli).
Wednesday | Caribbean Chicken Tacos (using this homemade rub)
Thursday | Chicken Pot Pie
Friday | Nachos
Saturday | Finger-licking Chicken & Potato Balls (from this cookbook)

The Reality

Sunday was easy. We knew that we’d be going to the grocery store pretty late in the afternoon (we usually all go together), so we wanted something quick that we could get started as we were putting groceries away. Frozen Mac and Cheese, Fish Sticks, and Chicken Strips did the trick.

Tequila Lime Chicken

Monday we had Tequila Lime Chicken, one of our very favorite dinners. It’s a copy cat recipe for Applebee’s version (now called Fiesta Lime Chicken) and it is spot on. We swap out the homemade sauce in the recipe with a mix of Spicy Ranch dressing and salsa and serve it up with brown rice mixed with salsa and corn chips. Yum!

Quinoa Mac & Cheese

Tuesday we tried Quinoa Mac & Cheese for the first time. I swapped out broccoli for the red peppers and accidentally put too much liquid in, but it still turned out dry. And a little bland. I’ll have to make some adjustments for next time. Even though it wasn’t amazing, it got broccoli and quinoa into everyone, so I’m willing to work out the kinks.

Caribbean Chicken Tacos

Wednesday we made Caribbean Chicken Tacos with my homemade caribbean jerk rub. Chicken covered with the rub + onion soft tacos + romaine lettuce + colby jack cheese + black olives + avocado + sour cream + corn salsa.

This might not sound like much (it was very easy to put together), but Jake hasn’t raved this much about something I’ve made in a long, long time. The rub is amazing and packs a big flavor punch. I’m going to have to figure out other recipes to incorporate it into!

Nachos

Thursday Jake started getting sick, so I opted out of the time consuming Chicken Pot Pie for much easier nachos. I used leftovers from Wednesday and cooked and seasoned some lean ground hamburger.

Friday Jake was so sick that he stayed home from work. That means it’s serious, because he’s only done that maybe one other time the whole time we’ve been married. Chicken Pot Pie hit the spot. Click the link for the recipe and details.

Saturday Jake was still sick and I was so exhausted I had to call my mom and ask her to come over so I could take a nap. So it’s not surprising that I abandoned the Finger-licking Chicken & Potato Balls and went for frozen instead.


Because yesterday was Easter and we had a big dinner at our house, this week’s menu centers around all of the ham we have left over:
