As you can see, last week did not go as planned. At all. It was just one of those weeks.

Sunday went off without a hitch. We made my very own Biscuits and Chicken Apple Bacon Gravy, which is super delicious. I love breakfast for dinner, especially on Sundays. Also, I had a lot of fun talking with with my UK friend Lizzie about the UK/US language differences for the words biscuit, cookie, and scone because of this dinner.

Corn and Bean Enchiladas

Monday we had Corn and Bean Enchiladas (from this cookbook), which is one of our go-to kid friendly dinners. We love that it sneaks in plenty of onions and tomatoes, which none of us really like. We also had black corn chips from Trader Joe’s and Pineapple Salsa (I just mixed chili salsa, corn salsa, and fresh pineapple).

d'Bronx

Tuesday didn’t go well at all (for non-family reasons) and by dinner time I was too stressed to think about cooking even frozen food. And Jake got home late, so he wasn’t into cooking either. Thus, our go-to: d’Bronx pizza. There’s nothing like greasy pizza and a glass of Coke to make you feel better when you’re stressed.

Wednesday Eliza was at her grandma’s (Jake’s Mom’s) and we didn’t feel like cooking a whole meal for just 2 and 1/2 of us. So we went with frozen.

Thursday my Dad brought us dinner (thanks Dad!). He ended up bringing pizza, but pizza is our favorite food, so we’re cool with having it twice in one week.

Club Sandwiches

Friday we had club sandwiches (three pieces of multigrain toast, bacon, turkey, colby jack cheese, and romaine lettuce). These were huge, we each only ate half of one. We had them with cottage cheese and veggie chips. We were making Mitch Hedberg joke references the whole time. How do you feel about frilly toothpicks? I’M FOR ‘EM! (Listen to the joke here, about a minute in. There’s a lot of four letter words, fair warning.)

Saturday I was super sick, so Jake went and got us soup from Panera Bread. Broccoli cheddar in a bread bowl for me and potato for them. Man, that felt good on my throat.


This week is half dinners we ended up not cooking last week.

Saturday | Finger-licking Chicken & Potato Balls (from this cookbook)
