Sunday we lunched at one of our favorite dive restaurants, Grinders, on a whim. We even dedicated last week’s Music Monday to the experience! We get a “Famous Chili Bomb” add on to a pepperoni pizza. Because the only way you can make New York style pizza better is by putting chili, melted cheese wiz, and tater tots on it. Of course. Fancy Jonas had tomato bisque soup. That kid will eat anything if the name sounds remotely non-English.

Chicken Teriyaki Stir Fry

After our adventures on Sunday, it was nice to have a dinner that was super easy. This stir fry is just chicken, store-bought teriyaki sauce, frozen Asian veggies, and tri-color noodles. The kids and Jake will gladly eat veggies if there are noodles involved, so it’s a go-to for us typically.

Crock Pot Ham and Beans

Monday We used up the last of our Easter ham with Crock Pot Ham and Beans. I’m going to try more crock pot recipes: it makes before dinner time (which is typically a stressful time of day) so much easier.

Burgers & Fries

Tuesday I felt awful. I had a stomach flu the night before and was up all night. Taking care of busy busy Jonas all day on little sleep and having to stick to the BRAT diet in the morning left me exhausted by the time Jake was on his way home from work. I was starving and craving cheeseburgers like crazy, so Jake was sweet enough to stop by the grocery store on the way home to get all the ingredients we needed and then grill us up some dinner. Man, that burger was heaven.

Spinach Quiche

Wednesday we tried Spinach Quiche (from this cookbook) for the first time. Instead of using a pre-made pie crust, I used the breadcrumb crust from this recipe. The crust to egg ratio was a little off (less crust next time), but all in all it was a win. Bacon canceled out the spinach and onion for my picky eaters, and Jonas loved having the leftovers for lunches.

Beef Stroganoff

Thursday we had Beef Stroganoff, which is classic and amazing.

Island Chicken Salad

DIY Caribbean Jerk Rub

Friday James, Jake’s best friend in high school, and his wife Brittany came over for dinner. Jake’s favorite thing right now is Island Salad with Homemade Caribbean Jerk Rub, so he wanted to spread the flavor love.

Cider, Pork, & Veggie Stew

Saturday was Cider Pork and Vegetable Stew (also from this cookbook). We love apples in savory dishes, and this stew with potatoes, celery, carrots, apples, cider, and pork shows off how fruit can do hearty perfectly. This is another crock pot recipe (whew!), which made this a low-stress week for me.
