Strawberry Spin Salad with Mission Valley Dressing

Mission Valley Salad Dressing


1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1 cup extra virgin olive oil
3/4 cup sugar
3-4 cloves garlic
1/2 tsp salt
1/2 t paprika
1/4 t white pepper
1/4 t cayenne


Blend vinegar and sugar.

Add all other ingredients but the oil. Blend.

Add the oil with the blender still running.


* You can use vegetable oil instead of olive oil.

*You must shake before using. Ingredients naturally separate.

*Refrigerate the dressing. You may need to let it warm up a bit before your next use so that it will mix thoroughly.

Strawberry Spin Salad with Mission Valley Dressing

I love this dressing on Strawberry Spin Salad. Start with baby spinach and top with cored and quartered strawberries, feta cheese crumbles, and crushed walnuts. Drizzle with yummy mission valley salad dressing. Add some warm french bread on the side and you’re in heaven. This is also delicious if you sub the feta for blue cheese and add grilled chicken.

I love eating this during the week for lunch when I’m in SAHM mode. It makes me feel more sophisticated. I have an “I’m a grown up in a cafe” moment to myself.
