Roasted Cauliflower Quiche with Garlicky Green Beans

THIS. WAS. AMAZING. I expected it to be only okay. And I thought the green bean/ quiche combo might be weird. But I was pleasantly surprised. And by that I mean blown away. Anti-vegetable Jake loved it and couldn’t even detect the cauliflower. He also ate all of his green beans. Eliza had a clean plate too. Nick, however, hates cauliflower, so he couldn’t stomach it. So I’d say this recipe is really good for picky eaters so long as they are not adamantly anti-cauliflower.

This may have been the most pleasantly textured meal I’ve ever had, just so you know.

Anywho, I followed the directions almost to a T this time. Which is rare. The only thing I did differently was substitute freeze dried parsley for fresh parsley (use 1/3 of the called for amount when substituting dried herbs for fresh herbs). And I forgot to sprinkle it in, so I added it to the top before I put it in the oven.

I’d like to announce that we are a week behind with sharing our What’s for Dinner posts. So I made this quite awhile ago. But you didn’t miss anything this week. We bought a teeny tiny grill (hooray for living in a house!) and tried our hand at some new techniques with that. Nothing fancy.
